So my husband and I have talked about trying this for a long long time, and it's never happened. Well, I finally put my foot down, and starting tonight at supper time we are going veggie for one week. The rules are, if we cook it at home, it's veggie. Going over to grandmas house, or having to grab lunch because you forgot to pack yours, is fine to cheat. But, if it's made at home it's veggie. We're still doing eggs and milk.
I'm super excited to try a bunch of new recipes that I normally overlook. To try some new veggies, or to learn ways to make old standbys new again. We're trying to eat and live healthier, and this is a good way to go. I don't know how long we'll stick to it after a week, but maybe we can do many more veggie dishes per week than we have in the past. That will make me happy at least.
I'll let you know how it goes, and any new recipes I love.

Well, I gotta say I love the idea! I'm a little biased, of course - I eat eggs and fish/seafood, but no meat of dairy. It totally rocks! I can recommend recipes if you're interested!
We were veggie for about 4 years. My favorite vegetarian cookbook (which I still use!) is the Passionate Vegetarian by Crescent Dragonwagon. (Yea, I know, what a name!) But really it has amazing recipes and info.
I"m a fan of new and exciting cookbooks! thanks for the tip! :)
